I remember seeing photos here on Yelp of Christmas decor at Kassandra's, a large nativity scene and greenery and twinkle lights... I still haven't visited at Christmastime but I've come here for breakfast and loved it and wish I lived closer. The breakfast tacos are really delicious, yummy tortillas and if you like beans, these refried beans are top notch. I had Pancho's Special: 2 eggs any style (over medium for me) topped with grilled onion, jalapeños, and tomatoes.. and it comes with beans, hash browns, and tortillas. It's a lot of flavorful food and every bite combo is so good. Especially with salsa. Oooh the chips and salsa are good! And try Kassandra's queso (queso with seasoned ground beef), it's addictive. They serve breakfast all day here and the options are robust, from Mexican dishes like carne guisada and migas to biscuits and gravy, pancakes, French toast, and omelettes. And that's just breakfast... they also have a whole lunch/dinner menu that's all Mexican food and a few hamburgers. The menu is a little overwhelming with so many options but it's mostly just different combos of the same delicious ingredients... as long as you have warm tortillas, ooooh anything you order is going to taste good with them!

Nice ambiance for a small strip-center spot. Service was excellent, and the food was very good. Had shrimp fajitas and it included a nice portion of nice-sized shrimp. It comes with the grilled onions and red and green pepper (along with rice and beans), and you pick two additional from cheese, sour cream, guacamole, etc. only came with two tortillas, but they offered more so all good! Also had a skinny margarita which was very tasty. And chips and salsa were very good. Will return for sure.

Another local restaurant just a couple of miles from our home - that we've never come to, until today. So many good places in our area but this one ranks at the top of our list now. We stopped in early on a Friday evening. They have a lot of tables in the dining room but it seems popular so get here earlier. Or prepare to wait a little bit. They're located in a very small strip center and it doesn't look like much outside. Once you step inside - it's transformed into a very quaint mom n pop restaurant. We definitely got a comfortable feeling with their ambiance. After waiting about 15 minutes we were seated. The wait staff is top notch. They're super friendly and very attentive. The chips and salsa came out quickly and our drinks were brought to us a few minutes after we got our drinks. We ordered a cup of the Kassandra's dip which was equally awesome. A very good queso with ground beef in it. I ordered the combo fajitas, which were UNBELIEVABLY amazing! So much flavor and loved those homemade tortillas. Even the rice and beans had so much flavor in them. My wife chose the Barbacoa burrito. It looked so good I had to steal a bite. Instantly had some envy of her choice. I'll get that next time for sure. All this and it didn't break the bank. Amazing food, clean restaurant, awesome service and very reasonable. We found a new favorite!
